    Prepare the Asparagus

    Preheat the oven to 400°F (200°C). Trim the asparagus and toss with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes until tender.

    Prepare the Eggplant

    Slice the eggplant into rounds, sprinkle with salt, and let sit for 10 minutes to draw out moisture. Rinse and pat dry. Heat 1 tablespoon of olive oil in a skillet and fry the eggplant slices until golden brown on both sides. Set aside.

    Cook the Tuna

    Rub the tuna steaks with the remaining olive oil and season with blackening seasoning or herbs, salt, and pepper. Heat a cast-iron skillet or grill pan over high heat. Sear the tuna for 1-2 minutes on each side for rare, or longer depending on your desired doneness.

    Fry the Eggs

    In the same skillet, crack the eggs and fry them to your liking (sunny-side-up or over-easy).

    Plate the Dish

    Serve the blackened or herbed tuna steaks alongside the roasted asparagus, fried eggplant, and topped with fried eggs.
