    Prepare Grits

    In a large pot, bring water to a boil. Slowly whisk in cornmeal and reduce heat to low. Cook, stirring frequently, until thickened (about 20-25 minutes). Stir in Parmesan, smoked gouda, butter, salt, and pepper. Pour into a greased baking dish and let cool. Once cooled, cut into cakes.

    Cook Shrimp

    In a large skillet, heat olive oil over medium-high heat. Add minced garlic and sauté for 1 minute until fragrant. Add shrimp and cook until pink, about 3-4 minutes. Stir in Diablo Sauce and cook for an additional 2 minutes until heated through.

    Fry Grit Cakes

    In a separate skillet, heat a bit of oil over medium heat. Fry the grit cakes until golden brown on both sides, about 3-4 minutes per side.

    Serve

    Place grit cakes on a plate, top with spicy shrimp, and garnish with chopped green onions.
