Roasting the Garlic
Preheat the oven to 400°F (200°C). Slice the top off each garlic bulb to expose the cloves. Drizzle with 2 tablespoons of olive oil and sprinkle with salt and pepper. Wrap each bulb in aluminum foil and place them on a baking sheet. Roast in the preheated oven for about 30-35 minutes, or until the cloves are soft and golden.

Preparing the Spinach
While the garlic is roasting, heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat. Add the fresh spinach and sauté until wilted, about 3-4 minutes. Season with salt and pepper to taste.

Serving the Dish
Once the garlic is done roasting, carefully unwrap it from the foil. On a serving platter, create a bed of sautéed spinach. Squeeze the roasted garlic cloves out of their skins onto the spinach. Top with grated Asiago cheese and serve with slices of focaccia bread on the side.
