Cooking Instructions

  1. 1

    Cook the Spaghetti

Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Redfish

Pat the redfish fillets dry and season both sides generously with blackening seasoning.

  3. 3

    Blacken the Redfish

In a large skillet, heat 2 tablespoons of butter over medium-high heat. Once hot, add the seasoned redfish fillets and cook for 3-4 minutes on each side until blackened and cooked through. Remove from skillet and keep warm.

  4. 4

    Cook the Shrimp

In the same skillet, add the remaining 2 tablespoons of butter. Add minced garlic and sauté for about 30 seconds until fragrant. Then add the shrimp and cook until they turn pink and opaque, about 2-3 minutes. Season with salt and pepper to taste.

  5. 5

    Make the Parmesan Cream Sauce

Reduce the heat to medium-low, then add heavy cream to the skillet with the shrimp. Stir in grated Parmesan cheese and continue to cook, stirring frequently, until the sauce thickens slightly, about 3-5 minutes. Adjust seasoning with salt and pepper as needed.

  6. 6

    Combine and Serve

To serve, place a bed of spaghetti on each plate, top with a blackened redfish fillet, spoon the shrimp and Parmesan cream sauce over the top, and garnish with chopped parsley.
