Marinate the Chicken
In a bowl, combine the chicken breasts with olive oil, salt, pepper, and your favorite Italian herbs. Let it marinate for at least 30 minutes.

Sauté the Vegetables
In a skillet over medium heat, add some olive oil, then sauté the onions, red bell pepper, and green bell pepper until they are soft and slightly caramelized.

Cook the Chicken
In the same skillet, add the marinated chicken breasts and cook until they are golden brown on both sides and cooked through, about 6-7 minutes per side.

Prepare the Pesto Mayo Sauce
In a small bowl, mix together mayonnaise and pesto sauce until well combined.

Assemble the Sub
Slice the acacia bread in half, place the sautéed vegetables on the bottom half, add the cooked chicken, and top with provolone cheese. Place under a broiler until the cheese is melted.

Finish and Serve
Spread the pesto mayo sauce on the top half of the bread, close the sandwich, slice, and serve warm.
