Draft Beer Pouring Procedure
Prepare glass and tap
Chill a clean pint glass in a refrigerator or pour ice water into it for a few minutes, then discard the ice water just before pouring. Flush the draft tap briefly with cold water (about 8 fl oz) to clear any stale beer or residue from the line and to cool the faucet.
Hold glass at angle
Hold the chilled pint glass at a 45-degree angle under the faucet. Position the lip of the glass about 1–2 inches from the faucet opening to reduce splash and excessive foam.
Straighten and finish
When the glass is about three-quarters full, gradually straighten it to vertical and finish pouring to create a 3/4–1 inch head of foam. Close the tap in a single smooth motion to avoid drips and excessive foam.
