Method

Preparation of the Chocolate Salami

  1. 1

    Melt the Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

  2. 2

    Whisk Eggs and Sugar

In a large mixing bowl, whisk together the eggs and sugar until the mixture is pale and creamy, about 5-7 minutes.

  3. 3

    Combine Mixtures

Slowly pour the melted chocolate and butter mixture into the egg and sugar mixture while continuously whisking to combine. Add the vanilla extract and mix well.

  4. 4

    Add Dry Ingredients

Crush the digestive biscuits into small pieces and add them to the chocolate mixture along with the chopped walnuts. Fold everything together gently until well combined.

  5. 5

    Shape the Salami

Lay out a large piece of plastic wrap on a clean surface. Pour the mixture onto the plastic wrap and shape it into a log. Wrap tightly and twist the ends to secure. Refrigerate for at least 4 hours or overnight until firm.

Serving

  1. 6

    Prepare Whipping Cream

In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and continue to whip until stiff peaks form.

  2. 7

    Slice and Serve

Once the chocolate salami is firm, remove it from the refrigerator and unwrap it. Dust the outside with cocoa powder before slicing it into rounds. Serve with a dollop of whipped cream on the side.
