Cooking the Pasta

Boil Water
In a large pot, bring 4 liters of water to a boil. Add 1 tablespoon of salt to the boiling water.

Cook Tonnarello
Add the tonnarello pasta to the boiling salted water and cook according to package instructions until al dente, usually around 8-10 minutes.

Reserve Pasta Water
Before draining, reserve about 1 cup of the pasta cooking water. Then, drain the pasta and set aside.
Making the Sauce

Combine Cheese and Pepper
In a large bowl, combine the grated Pecorino Romano cheese and the freshly cracked black pepper. Mix well.

Add Pasta Water
Gradually add the reserved pasta water to the cheese and pepper mixture while whisking to create a smooth sauce. Start with about ½ cup and add more as needed to reach a creamy consistency.

Toss Pasta
Add the drained tonnarello to the sauce, tossing quickly to coat the pasta evenly. If needed, add a little more reserved pasta water to help the sauce adhere.
Serving

Divide the pasta among serving plates. Drizzle with extra virgin olive oil and top with additional grated Pecorino Romano cheese and more black pepper, if desired.
