Method
Cooking the Pasta
- 1
Boil the Pasta
In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente.
- 2
Drain the Pasta
Once cooked, drain the pasta in a colander and set aside, reserving a cup of the pasta water.
Making the Sauce
- 3
Sauté Garlic
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
- 4
Add Chili Flakes
Stir in the red chili flakes and cook for another 30 seconds to release their flavor.
- 5
Add Tomatoes
Pour in the canned whole tomatoes, breaking them apart with a spoon. Let the sauce simmer for about 15-20 minutes, stirring occasionally.
- 6
Season the Sauce
Season the sauce with salt to taste. Add the fresh basil leaves and stir well.
Combining Pasta and Sauce
- 7
Combine
Add the drained penne pasta to the sauce in the skillet. Toss well to combine, adding reserved pasta water a little at a time if needed to loosen the sauce.
- 8
Serve
Serve hot, topped with grated Parmesan cheese and additional basil leaves if desired.
