Artichokes

Method

Preparing the Artichokes

  1. 1

    Clean the Artichokes

Begin by trimming the artichokes. Cut off the top third of each artichoke with a sharp knife. Remove the tough outer leaves until you reach the tender, pale leaves. Cut off the stem to about 1 inch, and rub the cut surfaces with lemon to prevent browning.

  2. 2

    Soak the Artichokes

Fill a large bowl with water and squeeze in the juice of the lemon. Place the trimmed artichokes in the lemon water and allow them to soak for about 30 minutes. This will help keep them from browning and also adds flavor.

  3. 3

    Dry the Artichokes

Remove the artichokes from the lemon water and shake off excess liquid. Use paper towels to gently pat them dry.

  4. 4

    Season the Artichokes

Sprinkle salt and black pepper generously over the artichokes, ensuring they are well-seasoned.

Frying the Artichokes

  1. 5

    Heat the Oil

In a large, deep frying pan, heat the vegetable oil over medium-high heat. You want enough oil to cover the artichokes when they are added.

  2. 6

    Fry the Artichokes

Once the oil is hot (around 350°F or 175°C), carefully add the artichokes, cut side down. Fry for about 10-15 minutes, or until they are golden brown and crispy. Use a slotted spoon to turn them occasionally for even frying.

  3. 7

    Drain the Artichokes

Once the artichokes are cooked, remove them from the oil and place them on a plate lined with paper towels to drain any excess oil.

  4. 8

    Serve

Serve the Carciofo alla Giudia hot, optionally with a sprinkle of additional salt or a squeeze of fresh lemon juice for an extra burst of flavor.
