Prepare the Noodles
Cook the rice noodles according to package instructions. Drain and set aside.

Cook the Meats
In a large skillet over medium heat, add the diced pork belly and cook until crispy. Add sliced andouille sausage and cook until browned. Stir in the crawfish tails and cook for an additional 3-4 minutes.

Make the Broth
In a separate pot, combine 4 cups of water, chicken bouillon, and fish sauce. Bring to a simmer.

Combine Ingredients
Add the cooked noodles to the skillet with the meat mixture. Pour the broth over the noodle and meat mixture and stir to combine. Let simmer for 2-3 minutes to heat through.

Ladle the noodle bowl into serving dishes. Top with garlic chile crunch and fried onions before serving.
