Prepare the Chimichurri
In a bowl, combine the chopped parsley, oregano, red wine vinegar, olive oil, minced garlic, and crushed red pepper flakes. Mix well and set aside.

Prepare the Steak
Rub the ribeye steak with espresso powder and smoked sea salt on both sides. Let it sit at room temperature for about 15 minutes.

Cook the Steak
Heat a skillet over medium-high heat and add 1 tablespoon of duck fat. Once hot, add the ribeye steak and cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest for 5 minutes.

Fry the Eggs
In the same skillet, add the remaining tablespoon of duck fat over medium heat. Crack the eggs into the skillet and cook sunny side up until the whites are set, about 3-4 minutes.
