    Prepare the Aïoli

    In a bowl, combine the mayonnaise, lemon juice, minced jalapeño, and a pinch of salt. Mix well and set aside.

    Sauté the Oranges

    Peel the oranges and cut them into segments. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the orange segments and sauté for about 2-3 minutes until they are warm and slightly caramelized. Remove from the skillet and set aside.

    Cook the Scallops

    Pat the scallops dry with paper towels and season both sides with salt and pepper. In the same skillet, add the remaining tablespoon of olive oil and heat over high heat. Once hot, add the scallops, being careful not to overcrowd the pan. Sear for about 2-3 minutes on each side until golden brown and cooked through.

    Serve

    On a plate, arrange the sautéed orange segments and top with the pan-seared scallops. Drizzle with the jalapeño aïoli and serve immediately.
