Method

For the Jerked Pork Chop

    Marinate the Pork Chops

    Rub the pork chops with jerk seasoning, salt, black pepper, and olive oil. Let them marinate for at least 30 minutes.

    Cook the Pork Chops

    Heat a grill or skillet over medium-high heat. Cook the marinated pork chops for about 6-7 minutes on each side, or until cooked through.

For the Coconut & Cilantro Fried Rice

    Prepare the Fried Rice

    In a large skillet, heat vegetable oil over medium heat. Add the cooked rice and stir-fry for a few minutes. Pour in the coconut milk, soy sauce, and stir in the cilantro and green onions. Cook until heated through.

For the Plantains

    Fry the Plantains

    Peel and slice the plantains diagonally. Heat oil in a frying pan over medium heat. Fry the plantain slices until golden brown on both sides, about 2-3 minutes per side. Drain on paper towels.

For the Grilled Pineapple Sofrito

    Grill the pineapple slices until caramelized, about 3-4 minutes on each side. In a bowl, mix the grilled pineapple with chopped red onion, minced garlic, lime juice, and cilantro.

For the Jerk Hot Honey

    In a small saucepan, combine honey and jerk seasoning. Heat over low heat until warmed through, stirring well.
