Prepare the Cheese
Grate the white cheddar and gouda. Cut the Trillium brie into small pieces. Set aside.

Prepare the Chiles
Remove the stems and seeds from the red Fresno chiles, then finely chop.

Make the Fondue Base
In a medium saucepan, rub the bottom with the halved garlic clove, then discard the garlic. Pour in the dry white wine and heat over medium until simmering.

Add the Cheese
Gradually add the grated white cheddar, gouda, and brie to the simmering wine, stirring constantly until melted and smooth.

Thicken the Fondue
In a small bowl, mix the cornstarch with a tablespoon of water to create a slurry. Stir this into the cheese mixture, cooking for an additional 2-3 minutes until thickened.

Add the Chiles
Stir in the chopped red Fresno chiles into the cheese fondue.

Serve
Transfer the fondue to a serving dish and serve warm alongside toasted artisanal focaccia for dipping.
