Preparing the Spring Rolls

Mix the Filling
In a large mixing bowl, combine the shredded cabbage, julienned carrots, chopped green bell pepper, and chopped scallions.

Season the Filling
Add soy sauce, sesame oil, minced garlic, minced ginger, salt, and black pepper to the vegetables. Mix well until all ingredients are evenly coated.

Wrap the Spring Rolls
Take one spring roll wrapper and place it on a clean surface with one corner facing you. Add about 2 tablespoons of the filling near the corner, fold that corner over the filling, then fold in the sides and roll tightly. Seal the edge with a bit of water. Repeat with remaining wrappers and filling.

Fry the Spring Rolls
Carefully add the spring rolls to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown and crispy. Remove and drain on paper towels.
Making the Sweet & Sour Sauce

Combine Sauce Ingredients
In a small saucepan, combine ketchup, apple cider vinegar, brown sugar, soy sauce, pineapple juice, and cornstarch.

Cook the Sauce
Heat the mixture over medium heat, stirring constantly until it thickens and becomes smooth, about 5-7 minutes. Remove from heat and let cool slightly.
