Dumpling Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and water. Mix until a dough forms.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 5-10 minutes until smooth and elastic.

    Rest the Dough

    Cover the dough with a damp cloth and let it rest for 30 minutes.

Filling Preparation

    Prepare the Filling

    Chop the raw shrimp into small pieces and place them in a mixing bowl.

    Mix Ingredients

    Add the green onions, minced garlic, grated ginger, soy sauce, sesame oil, cornstarch, and salt to the shrimp. Mix well until all ingredients are thoroughly combined.

Assembly and Cooking

    Roll out the Dough

    After the dough has rested, divide it into small pieces. Roll each piece into a thin circle, about 3 inches in diameter.

    Fill the Dumplings

    Place about a tablespoon of the shrimp filling in the center of each dough circle. Gather the edges of the dough and pinch them together to form a pouch, leaving the top open.

    Steam the Dumplings

    Place the shumai in a steamer basket lined with parchment paper. Steam over boiling water for 10-12 minutes until the shrimp is cooked through.

    Alternatively, heat oil in a pan and fry the dumplings until golden brown on the bottom, then add a few tablespoons of water, cover, and steam until cooked through.

    In a small bowl, combine soy sauce, rice vinegar, and chili oil. Adjust the chili oil to your taste.
