Method
Prepare Sushi Rice

Cook Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions.

Season Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, let it cool slightly, then fold the vinegar mixture into the rice. Set aside.
Prepare Toppings

Prepare Ahi Tuna
Cut the sushi-grade ahi tuna into small cubes and set aside.

Slice Avocado
Cut the avocado in half, remove the pit, and slice into thin wedges.

Slice Cucumber
Peel the cucumber if desired, then slice it into thin rounds.

Chop Green Onions
Thinly slice the green onions and set aside.

Prepare Seaweed Salad
If using pre-packaged seaweed salad, simply open and set aside. If homemade, prepare according to your recipe.

Toast Sesame Seeds
In a small dry skillet, toast the sesame seeds over medium heat until golden brown, about 2-3 minutes. Stir frequently to avoid burning.
Prepare Spicy Sauce (optional)

Mix Spicy Sauce
In a small bowl, combine sriracha sauce, mayonnaise, and sesame oil. Mix well until creamy and smooth.
Assemble Poke Plate

Layer Ingredients
In a bowl or on a plate, start with a base of sushi rice. Top with cubed ahi tuna, avocado slices, cucumber rounds, seaweed salad, and sprinkle with green onions and toasted sesame seeds.

Add Spicy Sauce
If using, drizzle the prepared spicy sauce over the poke ingredients.
