Prepare the Base

Cook the Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.

Choose your preferred protein: tuna, salmon, or snapper. If using spicy mayo, mix it with your chosen protein for a spicy version.

Slice the Protein
Cut the chosen fish into bite-sized cubes or thin slices.
Assemble the Poke Bowl

Layer the Ingredients
In a bowl, start with a generous scoop of seasoned sushi rice at the bottom. Layer the fish of your choice on top.

Top with seaweed salad, slices of avocado, cucumber, radish, and chopped green onions. Sprinkle sesame seeds over the top.
