Preparing the Bulgogi

Marinate the Beef
In a bowl, combine soy sauce, sugar, sesame oil, minced garlic, minced ginger, and black pepper. Mix well. Add the Bulgogi beef and marinate for at least 30 minutes, preferably 2 hours for best flavor.

Cook the Bulgogi
Heat a skillet over medium-high heat. Add the marinated Bulgogi beef and cook for about 5-7 minutes until the beef is well cooked and slightly caramelized. Stir occasionally to ensure even cooking.

Add Green Onions
Once the beef is cooked, stir in the chopped green onions and cook for an additional 1-2 minutes until they are slightly wilted. Remove from heat.
Assembling the Tacos

Prepare the Tortillas
Warm the soft taco tortillas in a dry skillet or microwave for about 10-15 seconds until pliable.

Add Sauce and Garnish
If desired, drizzle with Sriracha or gochujang for extra heat. Sprinkle sesame seeds on top for garnish.
