Method

Cake Preparation

  1. 1

    Preheat Oven

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

  3. 3

    Prepare Flax Egg

In a small bowl, mix the ground flaxseed with water. Let sit for about 5 minutes until it thickens.

  4. 4

    Combine Wet Ingredients

In another bowl, mix the grated carrots, applesauce, vegetable oil, vanilla extract, and the prepared flax egg until smooth.

  5. 5

    Combine Mixtures

Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix.

  6. 6

    Bake the Cake

Divide the batter evenly between the two prepared pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Frosting Preparation

  1. 7

    Beat the Frosting Ingredients

In a medium-sized bowl, beat together the vegan cream cheese, powdered sugar, vegan butter, and vanilla extract until smooth and creamy.

  2. 8

    Frost the Cake

Once the cakes are completely cooled, place one layer on a serving plate and spread a generous amount of frosting on top. Place the second layer on top and frost the top and sides of the cake as desired.
