In a medium pot, combine 1 cup of brown rice with 2 1/2 cups of water. Bring to a boil, then reduce heat to low, cover, and cook for 40-45 minutes or until the rice is tender and the water is absorbed. Let it sit for 10 minutes, then fluff with a fork.
