Rinse 1 cup of quinoa under cold water. In a pot, combine rinsed quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let it sit for 5 minutes, then fluff with a fork.

Chop the fresh spinach, dice the tomatoes, slice the cucumbers, and dice the red onion. Set all vegetables aside in a large mixing bowl.

Cook Grilled Chicken

Season the chicken breast with salt and pepper. Grill over medium heat for 6-7 minutes on each side or until fully cooked. Let it rest for 5 minutes before slicing.

If using canned chickpeas, drain and rinse them under cold water. Set aside.
