Preparation
- 1
Prepare the Cucumbers
Cut the cucumbers in half lengthwise and then into 2-inch pieces. Place them in a bowl and sprinkle with salt. Let them sit for about 10 minutes to draw out excess water.
- 2
Make the Pickling Mixture
In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, chili flakes, and sugar until the sugar is dissolved.
Cooking
- 3
Garlic Crunch
In a small pan, heat the vegetable oil over medium heat. Add the minced garlic and sauté until golden brown. Add the sesame seeds and cook for another minute. Remove from heat and set aside.
- 4
Combine Everything
Drain the excess water from the cucumbers and add them to the pickling mixture. Toss to coat well. Let it marinate for at least 15 minutes.
- 5
Serve
Transfer the marinated cucumbers to a serving dish, top with the garlic crunch, and garnish with chopped green onions. Serve chilled or at room temperature.
