Preparing the Filling
Make the Filling
In a bowl, combine the chopped prawns, minced garlic, minced ginger, chopped green onions, soy sauce, sesame oil, salt, and black pepper. Mix well until everything is evenly distributed.
Assembling the Gyoza
Fill the Wrappers
Take a gyoza wrapper and place about 1 tablespoon of the prawn filling in the center. Moisten the edges of the wrapper with water, fold it in half, and pinch the edges to seal. Repeat this with the remaining wrappers and filling.
Cooking the Gyoza
Fry the Gyoza
Heat vegetable oil in a non-stick skillet over medium heat. Place the gyoza in the skillet and fry for about 2-3 minutes until the bottom is golden brown. Add a splash of water (about 1/4 cup), cover the skillet, and steam for another 3-4 minutes until the water evaporates and the gyoza are cooked through.

Combine Sauce Ingredients
In a small bowl, whisk together soy sauce, citrus juice, rice vinegar, and mirin until well combined.
