Prepare the Bacon

In a skillet over medium heat, cook the bacon until crispy. Remove the bacon, crumble it, and set aside, leaving some grease in the pan.

Sauté the Spinach

In the same skillet, add olive oil or butter if needed, and sauté the fresh spinach until wilted. This should take about 2-3 minutes.

Whisk the Eggs

In a bowl, whisk together the eggs, salt, and black pepper until well combined.

Cook the Omelet

Pour the egg mixture into the skillet over medium-low heat. Allow the eggs to cook undisturbed until the edges start to set.

Add Fillings

Once the edges have set, sprinkle the sautéed spinach, crumbled bacon, diced tomatoes, and cheddar cheese evenly over one half of the omelet.

Fold the Omelet

Carefully fold the other half of the omelet over the fillings. Cook for an additional 1-2 minutes until the cheese melts and the inside is cooked to your liking.

Serve

Slide the omelet onto a plate, cut in half if desired, and serve warm.
