Prepare the Biscuits

Bake the biscuits according to package instructions or your favorite homemade biscuit recipe. Keep warm.

Cook the Vegetables

In a skillet, heat olive oil over medium heat. Add sliced onions and bell peppers (and mushrooms, if using) and sauté until they are tender and slightly caramelized, about 5-7 minutes. Season with salt and black pepper.

Cook the Ribeye

Add the shaved ribeye steak to the skillet with the vegetables. Cook until the steak is browned and cooked through, about 3-5 minutes. Stir occasionally.

Cook the Eggs

In a separate pan, cook the eggs to your liking (scrambled, sunny-side up, etc.).

Assemble the Biscuit

Slice the warm biscuits in half. On the bottom half, layer the ribeye and vegetable mixture. Add the cooked eggs on top, then sprinkle with melted pepperjack cheese. Close with the top half of the biscuit.
