Preparation
Prepare Chicken
Cut the chicken breast into strips and place them in a bowl. Pour buttermilk over the chicken and let it marinate for at least 1 hour (or overnight in the refrigerator for best results).
Prepare Breading
In a separate bowl, mix together the flour, cornstarch, salt, black pepper, garlic powder, and paprika.
Coat Chicken
In another bowl, beat the egg. Remove the chicken from the buttermilk, letting the excess drip off, then dip each piece into the egg and coat with the flour mixture.
Fry Chicken
Heat oil in a deep pan over medium-high heat. Fry the chicken tenders in batches until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.
Serve
Serve the chicken tenders with fries and coleslaw on the side.
