    Prepare the Fries

    Peel and cut the potatoes into desired fry shape. Rinse in cold water and pat dry.

    Fry the Potatoes

    In a deep fryer or large pot, heat oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crisp, about 5-7 minutes. Remove and drain on paper towels.

    Season the Fries

    Toss the hot fries with house BBQ rub, salt, and pepper in a large bowl until evenly coated.

    Cook the Meats

    In a skillet, cook the bacon until crispy. Remove and set aside. In the same skillet, cook the sausage until browned and heated through. Remove and set aside.

    Cook the Steak Tips and Eggs

    In the same skillet, cook the steak tips to your desired doneness. In another pan, fry the eggs sunny-side up.

    Assemble the Dish

    On a large plate, layer the seasoned fries, top with smoked cheese curds, crumbled bacon, cooked sausage, and brown gravy. Finally, add the cooked steak tips and top with fried eggs.
