Brewing Instructions
1. Mashing
In a large brew kettle, heat 5 liters of water to 70°C (160°F). Add the Pilsner malt, wheat malt, and flaked wheat. Stir well and maintain the temperature for 60 minutes.
2. Sparging
After mashing, sparge the grains with hot water (around 75°C or 170°F) to collect the wort. Aim for about 4 liters of wort.
3. Boiling
Bring the wort to a boil. Once boiling, add the bittering hops and let it boil for 60 minutes. In the last 10 minutes of the boil, add the coriander, chamomile, and Curaçao orange peel.
4. Cooling
After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches around 20°C (68°F).
5. Fermentation
Transfer the cooled wort to a sanitized fermentation vessel. Add the Belgian Wit yeast and seal the vessel with an airlock. Allow it to ferment at room temperature for 1-2 weeks.
6. Bottling
Once fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the beer. Bottle the beer in sanitized bottles and cap them.
7. Conditioning
Let the bottles condition at room temperature for 1-2 weeks before chilling and enjoying.
