    Prepare the Herb Mixture

    In a large pot, combine the sassafras root, sarsaparilla root, wintergreen leaves, and nutmeg with the water. Bring to a boil, then reduce heat and let it simmer for 30 minutes.

    After simmering, strain the liquid to remove the herbs and return the liquid to the pot. Stir in the sugar until completely dissolved.

    Cool the Mixture

    Remove the pot from heat and let the mixture cool to room temperature.

    Add Yeast

    Once cooled, sprinkle the active dry yeast over the mixture and stir gently. Cover the pot and let it sit at room temperature for 12-24 hours to ferment.

    Bottle the Root Beer

    After fermentation, carefully pour the root beer into clean bottles, leaving a little space at the top. Add carbonated water to each bottle to taste.
