    Prepare the Pulled Pork

    If you haven't already, smoke and cook the pulled pork until tender, then shred it and set aside.

    Poach the Eggs

    In a pot, bring 4 cups of water and 2 tbsp of vinegar to a gentle simmer. Crack the eggs into small bowls and gently slide them into the water. Poach for about 3-4 minutes until the whites are set and yolks are still runny. Remove with a slotted spoon and set aside.

    Toast the English Muffins

    Slice the English muffins in half and toast them until golden brown.

    Assemble the Benedict

    On each toasted English muffin half, layer a generous portion of pulled pork, followed by sliced jalapeños. Place a poached egg on top of each. Drizzle with moonshine sauce and sprinkle with fried onion straws.

    Serve

    Season with salt and pepper to taste, and serve immediately.
