    Prepare Home Fries

    Dice the potatoes, bell pepper, and onion into small pieces. Heat olive oil in a skillet over medium heat.

    Add diced potatoes to the skillet. Sprinkle with salt and black pepper. Cook for about 10-15 minutes, stirring occasionally, until golden and crispy. Add diced bell pepper and onion halfway through cooking. Once done, set aside.

    Cook Sausage and Bacon

    In the same skillet, add the breakfast sausage and cook until browned and fully cooked, about 5-7 minutes.

    Remove the sausage and add the bacon strips to the skillet. Cook until crispy, about 4-5 minutes. Remove and drain on paper towels.

    Scramble Eggs

    In a bowl, whisk the eggs with a pinch of salt and pepper.

    In the same skillet, pour in the beaten eggs. Stir gently with a spatula until the eggs are softly scrambled, about 3-4 minutes.

    Assemble the Dish

    On a plate, layer the home fries, followed by the scrambled eggs, sausage, and bacon.

    Top with a Belgian waffle or French toast. Serve with mixed berries on the side and drizzle with whipped cream.
