Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. In another bowl, whisk together the buttermilk and egg. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

Heat the Oil
In a deep pot or frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the Cheese Curds
Dip each cheese curd into the batter, ensuring it is well coated. Let excess batter drip off.

Fry the Cheese Curds
Carefully place the battered cheese curds into the hot oil. Fry in batches for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve the fried cheese curds hot with Melba sauce on the side for dipping.
