Soup Preparation

    Caramelize the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 25-30 minutes.

    Add the minced garlic and cook for an additional minute. Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom.

    Stir in the beef broth, thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil, then reduce heat and simmer for 30 minutes.
