    Caramelize the onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and salt. Cook, stirring frequently, until the onions are caramelized, about 30-40 minutes.

    Add liquids

    Once the onions are caramelized, add the dry white wine and scrape the bottom of the pot to deglaze. Allow the wine to reduce for about 5 minutes.

    Add the beef broth, thyme, bay leaf, black pepper, and bring to a simmer. Let it cook for another 15-20 minutes.

    Prepare the bread

    While the soup is simmering, slice the baguette into thick slices and toast them until golden brown.

    Ladle the soup into bowls, top with toasted baguette slices, and sprinkle with Gruyere and Parmesan cheese. Place under a broiler for 2-3 minutes until the cheese is bubbly and golden.
