Make the Pancakes
In a large bowl, whisk together flour, baking powder, salt, and sugar. In another bowl, mix the milk, egg, and melted butter. Combine wet and dry ingredients until just mixed. Heat a non-stick skillet over medium heat and pour about 2-3 tablespoons of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown. Repeat until all batter is used.

Prepare the Cream Cheese Frosting
In a mixing bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until well combined. Adjust sweetness if necessary.

Assemble the Pancake Tacos
Place a pancake on a serving plate. Spread a layer of cream cheese frosting on top, add fresh strawberries and blueberries, and sprinkle with strawberry crunch. Fold the pancake in half to form a taco shape. Top with whipped cream and additional fruits if desired.
