    Preparing the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to resemble fries.

    Soaking the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, then drain and pat them dry with a paper towel.

    Heating the Oil

    In a deep fryer or a large, heavy pot, heat the vegetable oil to 350°F (175°C).

    Frying the Potatoes

    Carefully add the dried potato strips to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes per batch. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

    Seasoning the Fries

    While the fries are still hot, sprinkle them generously with salt, freshly ground black pepper, and grated Parmesan Reggiano cheese. Drizzle with black truffle oil.

    Serve immediately while hot and crispy, garnished with additional Parmesan and a drizzle of truffle oil if desired.
