Preparation of Pork Rillettes

Prepare the Pork

Cut the pork shoulder into cubes and season with salt and pepper.

Cook the Pork

In a large pot, melt the pork fat over medium heat. Add shallots and garlic, cooking until softened. Add the pork cubes, thyme, bay leaves, and white wine. Bring to a simmer.

Simmer

Cover the pot and reduce heat to low. Cook for 2-3 hours until the pork is very tender, stirring occasionally.

Shred the Meat

Once cooked, remove the pork from the pot and let it cool slightly. Shred the meat with two forks, discarding any large pieces of fat and bones. Return the shredded meat to the pot.

Mix and Chill

Stir the cooking liquid into the shredded pork until well combined. Transfer to a container, cover, and refrigerate for at least 2 hours, or preferably overnight.

Prepare the Toast

Toast the slices of bread until golden brown.

Serve

Serve the rillettes with toasted bread, cornichons, and Dijon mustard on the side.
