Preparation of Pork Rillettes
Prepare the Pork
Cut the pork shoulder into cubes and season with salt and pepper.
Cook the Pork
In a large pot, melt the pork fat over medium heat. Add shallots and garlic, cooking until softened. Add the pork cubes, thyme, bay leaves, and white wine. Bring to a simmer.
Simmer
Cover the pot and reduce heat to low. Cook for 2-3 hours until the pork is very tender, stirring occasionally.
Mix and Chill
Stir the cooking liquid into the shredded pork until well combined. Transfer to a container, cover, and refrigerate for at least 2 hours, or preferably overnight.
Prepare the Toast
Toast the slices of bread until golden brown.
Serve
Serve the rillettes with toasted bread, cornichons, and Dijon mustard on the side.
