    Caramelize the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 30-40 minutes.

    Add Broth and Wine

    Once the onions are caramelized, stir in the dry white wine, scraping up any browned bits from the bottom of the pot. Allow it to simmer for about 5 minutes until slightly reduced.

    Combine Ingredients

    Add the beef broth, thyme, bay leaves, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.

    Prepare the Baguette

    While the soup simmers, preheat the oven to 350°F (175°C). Slice the French baguette into thick slices and arrange them on a baking sheet. Toast them in the oven for about 10 minutes or until lightly golden.

    Serve the Soup

    Remove the bay leaves from the soup. Ladle the soup into oven-safe bowls, top each with toasted baguette slices, and sprinkle generously with Gruyère cheese.

    Place the bowls under the broiler for about 3-5 minutes, or until the cheese is melted and bubbly. Serve hot.
