Pickled Onions

    Combine apple cider vinegar, water, sugar, and 1/2 tsp kosher salt in a small heatproof bowl or jar. Stir until sugar and salt dissolve.

    Add thinly sliced red onion and press down so the onion is submerged. Let cool to room temperature, then refrigerate for at least 15 minutes (best 30 minutes) while you prepare the rest. These are quick-pickles and ready when slightly softened and tangy.

Chipotle Béchamel

    Make roux

    In a small saucepan over medium-low heat, melt 1 tablespoon butter. Add 1 tablespoon flour and stir with a whisk to form a paste. Cook 1–1.5 minutes, stirring, to remove the raw flour taste but do not brown.

    Slowly whisk in 3 oz (about 6 tablespoons) whole milk a little at a time until smooth. Increase heat slightly and bring to a gentle simmer, whisking, until the sauce thickens to a pourable cream (about 2–3 minutes).

    Remove from heat and whisk in 1 teaspoon minced chipotle, 1/2 teaspoon adobo sauce, 1/2 teaspoon lime juice and 1/4 teaspoon salt. Taste and adjust — add more adobo for heat or more milk to thin. Keep warm over very low heat or transfer to a small serving container.

Omelet & Filling

    Prepare crab and bacon: if lobster-style lumps are cold, pat dry. Chop cooked bacon into small pieces. In a small bowl, gently fold together lump crab, chopped bacon, and 3 tablespoons softened cream cheese until evenly combined but still slightly chunky. Season lightly with 1/4 tsp salt and a few grinds of black pepper. Reserve.

    Beat eggs: In a bowl, crack 4 large eggs and add 2 tablespoons heavy cream, remaining 3/4 tsp kosher salt and 1/2 tsp black pepper. Whisk until homogenous and slightly frothy (about 20–30 seconds).

    Heat a nonstick skillet (8–10 inches) over medium-low heat. Add 1/2 tsp neutral oil and 1 tablespoon butter. Swirl until butter melts and the pan is coated and foam subsides but before it browns.

    Pour the egg mixture into the pan and let sit undisturbed for about 20–30 seconds until edges begin to set. With a silicone spatula, gently pull set edges toward the center while tilting the pan to allow uncooked egg to flow to the edges, repeating until mostly set but still slightly creamy on top (about 1–2 minutes total).

    Spoon the crab–bacon–cream cheese mixture down the center of the omelet in a line. Sprinkle chopped cilantro (about 1 tablespoon) over the filling.

    Carefully fold one side of the omelet over the filling, then either slide onto a plate seam-side down or fold in half to form a neat envelope. Keep warm.

Finish & Serve

    Place the folded omelet on a serving plate. Drizzle 2–3 tablespoons of warm chipotle béchamel over the top.

    Top with 2 tablespoons crumbled cotija cheese and a generous pinch of pickled red onions (drain excess liquid) to taste. Garnish with remaining chopped cilantro leaves and serve with a lime wedge on the side for squeezing.

    Serve immediately while the omelet is warm and the béchamel is luscious. Leftovers (separately stored) keep 1–2 days: pickles and béchamel refrigerated; omelet best eaten same day.
