Sweeten and flavor yogurt
In a medium bowl, stir together 2 cups plain Greek yogurt, 2 tablespoons honey (or maple syrup), 1 teaspoon vanilla extract, and 1 teaspoon finely grated lemon zest until smooth and slightly airy. Taste and adjust sweetness to preference.

Cover and chill the flavored yogurt for at least 10 minutes if time allows so flavors meld; it can also be used immediately.

Wash all berries thoroughly and drain. Hull and quarter the strawberries. If using banana, slice just before assembling to avoid browning.

If you prefer slightly macerated berries: toss strawberries and raspberries with 1 teaspoon honey and let sit 5–10 minutes to release juices. Otherwise leave fruit fresh for more texture.

If granola or nuts are not already toasted, warm a small skillet over medium heat and toast 2 tablespoons sliced almonds, stirring, until fragrant and lightly golden (about 2–3 minutes). Cool.

Measure out 1/2 cup granola and 1 teaspoon chia seeds; have mint leaves chopped and ready.
