    Build and shake

    Fill a cocktail shaker with ice (about 3/4 full). Add 1.5 oz 21 Seed Orange Tequila, 0.75 oz Aperol, 1 oz fresh orange juice, 0.5 oz passion fruit puree, and 0.25 oz simple syrup if you prefer a touch more sweetness. Secure the shaker and shake vigorously for 10–12 seconds until well chilled and slightly diluted.

    Strain and top

    Fill a large wine or spritz glass with fresh ice (about 1 cup). Strain the shaken mixture into the prepared glass. Gently top with 2 oz chilled Prosecco, pouring slowly to preserve bubbles. Give the drink one soft stir (1–2 rotations) to integrate the Prosecco without flattening it.

Garnish

    Float half a teaspoon of passion fruit pulp/seeds on top of the cocktail (from the 1/2 passion fruit) for visual interest and a tart pop of flavor. Slide an orange wheel onto the rim or rest it on the ice. Add a mint sprig if desired for aroma. Serve immediately with a straw or cocktail pick.
