Crisp the tortillas
Heat a large skillet over medium-high heat and add 1 tablespoon of vegetable oil. When shimmering, add two tortillas and fry 45–60 seconds per side until blistered and crisp but still pliable. Transfer to a paper towel-lined plate. Add remaining 1 tablespoon oil and repeat with remaining tortillas. Keep warm in a low oven (90–100°C / 200°F) while finishing. Reserve lightly for serving.

Crumble queso fresco and pick leaves from cilantro; set aside for final assembly.
Black Beans

Prepare warm black beans
Heat 1 tablespoon olive oil in a medium skillet over medium heat. Add the chopped onion and cook 4–5 minutes until softened and translucent. Add minced garlic and cook 30 seconds until fragrant. Stir in drained black beans, ground cumin, smoked paprika, salt and pepper. Add 1/4 cup water or broth and simmer gently, mashing about one-third of the beans with the back of a spoon to thicken, 4–6 minutes. Adjust seasoning to taste and keep warm.

Roast and blend salsa
Place the quartered tomatoes, onion, serrano/jalapeño peppers and garlic on a hot dry skillet or comal over medium-high heat. Cook, turning occasionally, until charred and blistered on all sides, about 8–10 minutes. Transfer the hot vegetables to a blender or food processor. Add cilantro, 1 teaspoon oil, salt, pepper and lime juice. Pulse until you reach a chunky salsa consistency. Taste and adjust salt or lime. If salsa is very hot, let rest 5 minutes to mellow. Keep warm or at room temperature.

Poach the eggs
Bring a wide shallow saucepan of water to a gentle simmer (small bubbles, not a rolling boil). Stir in 1 teaspoon white vinegar. Crack each egg into a small cup. Create a gentle whirlpool in the water with a spoon and slide one egg in at a time (or gently lower). Poach for 3–4 minutes for runny yolks or 4–5 minutes for slightly firmer yolks. Use a slotted spoon to lift eggs and briefly drain on paper towel. Season lightly with a pinch of the listed salt and pepper.

Assemble huevos rancheros
Place two crisp tortillas on each plate. Spoon about 1/2 cup warm black beans on each tortilla, spreading to cover. Ladle 2–3 tablespoons of salsa ranchera over the beans. Top each tortilla with a poached egg. Add sliced or mashed avocado, sprinkle 1/4 cup crumbled queso fresco per serving (total 1/2 cup per two tortillas), and scatter cilantro. Serve immediately with lime wedges to squeeze over the top.
