Method
Croissant
- 1
Prepare and warm croissants
Preheat the oven to 350°F (175°C). Line a small baking sheet with parchment. Place 4 store-bought butter croissants on the sheet spaced slightly apart.
- 2
Warm in the oven for 6–8 minutes until heated through and the exterior is lightly crisped. If croissants were frozen, extend to 10–12 minutes and check doneness.
- 3
While croissants warm, melt 2 tbsp unsalted butter in a small microwave-safe bowl or on the stovetop until just liquid (about 15–20 seconds in microwave). If using apricot jam for a glaze: warm 2 tsp jam with 1 tsp water in microwave 10 seconds and stir until smooth.
- 4
Remove croissants from the oven. Using a pastry brush, lightly brush melted butter over the top of each croissant. If glazing, brush apricot glaze on top after the butter for a shiny finish.
- 5
Let rest 1–2 minutes. Serve warm whole or halved on the plate alongside the fruit. Offer optional spreads (cream cheese, yogurt) and maple syrup on the side.
Fruit Plate
- 6
Rinse all fruit under cold running water. Pat dry with a clean towel or paper towels. Drain well—excess moisture will make the plate soggy.
- 7
Prepare strawberries and grapes
Hull and quarter strawberries (if large) so pieces are bite-size. Remove any stems from green grapes and halve large grapes if desired.
- 8
Prepare pineapple
If using whole pineapple, remove skin and core and cut into bite-size chunks. If using pre-cut pineapple, drain any excess juice and pat dry.
- 9
Prepare kiwi
Peel the kiwis and slice into rounds or half-moons about 1/4-inch thick.
- 10
Segment orange
If segmenting: cut off top and bottom of the orange, slice away peel and pith with a knife, then cut between membranes to release segments (supremes). Alternatively peel and section. Collect any juices in a small bowl.
- 11
Combine strawberries, grapes, pineapple, kiwi, blueberries and orange segments on a serving platter or individual plates. Arrange attractively (group by color or fan slices).
- 12
In a small bowl, whisk together 1 tsp lemon juice and 1 tsp honey (optional). Drizzle lightly over fruit to brighten flavors and prevent browning. Toss gently to coat evenly.
- 13
Garnish fruit with fresh mint leaves. If any fruit released juice, spoon a little over the plate for extra flavor.
- 14
Serve fruit chilled or at cool room temperature alongside the warm croissants. Provide small bowls of cream cheese, Greek yogurt, and maple syrup so diners can add spreads.
Plating & Serving
- 15
Place warmed croissants on one side of the plate or board and mound the prepared fruit on the other side. Tuck mint sprigs between fruit for a fresh look.
- 16
Include small spoons or butter knives for spreads. If desired, slice croissants in half horizontally for easier spreading. Serve immediately so croissants remain warm and fruit remains fresh.
