Make cinnamon swirl
In a small saucepan over low heat or in a microwave-safe bowl, melt 2 tbsp unsalted butter. Stir in 1 tbsp light brown sugar and 1 tsp ground cinnamon until sugar dissolves and mixture is smooth. Add 1 tbsp maple syrup and a small pinch of salt to brighten flavor. Remove from heat and set aside to cool slightly. The mixture should be spreadable but not hot when used.

Combine dry ingredients
In a large mixing bowl whisk together 1.5 cups all-purpose flour, 2 tbsp granulated sugar, 2 tsp baking powder, 1/2 tsp baking soda, and 1/2 tsp fine salt until evenly distributed.

Combine wet ingredients
In a separate bowl or large measuring cup whisk 1 1/4 cups buttermilk, 1 large egg, 1 tsp vanilla extract, and 3 tbsp melted unsalted butter until smooth.

Make batter
Pour the wet ingredients into the dry ingredients and gently fold with a spatula or whisk just until combined. A few lumps are fine — do not overmix. Let the batter rest 5 minutes while you preheat your griddle; this relaxes the gluten and yields tender pancakes.
Cook Pancakes & Add Swirl

Preheat griddle
Heat a nonstick skillet or griddle over medium heat until hot (about 375°F / 190°C if using a thermometer). Lightly brush with neutral oil or 1 tsp melted butter to coat.

Cook first side
For each pancake, pour about 1/4 cup batter onto the griddle. Cook until bubbles form on the surface and edges look set, about 2 to 2 1/2 minutes.

Add cinnamon swirl and finish cooking
When bubbles appear and the pancake is nearly ready to flip, quickly spoon about 1 tsp of the cinnamon swirl onto the pancake and use the back of the spoon to drag it gently in a small figure-eight or spiral to create a swirl pattern (do not overwork the batter). Immediately flip the pancake and cook until the second side is golden and cooked through, about 1 to 1 1/2 minutes. Repeat with remaining batter and cinnamon swirl, wiping the pan and re-oiling if needed to prevent sticking.

Make glaze
While pancakes are cooking (or after), beat 4 oz softened cream cheese in a medium bowl until smooth. Gradually add 1 cup powdered sugar and beat until combined. Add 2 tbsp milk and 1/2 tsp vanilla extract and beat to a smooth, pourable glaze. If too thick, add up to 1 tsp more milk. Stir in 1/2 tsp lemon zest (optional) and a pinch of salt to balance sweetness.

Warm slightly if needed
If the glaze firms as it sits, warm gently in the microwave for 5–8 seconds and stir to reach a drizzling consistency. Do not overheat.
Serve

Stack pancakes 2–3 high on plates. Spoon or drizzle cream cheese glaze over the top so it settles into the cinnamon swirls. Top with a pat of butter and a little maple syrup if desired. Serve immediately.
