Carne Asada (Adobo Grilled Skirt Steak)

    Make the marinade

    In a shallow dish or resealable bag, whisk together orange juice, lime juice, soy sauce, vegetable oil, minced garlic, ground cumin, smoked paprika, chili powder, and adobo seasoning until combined.

    Marinate the steak

    Place the skirt steak in the marinade, turning to coat fully. Add chopped cilantro on top. Marinate in the refrigerator for at least 30 minutes and up to 4 hours (do not exceed 8 hours to avoid texture changes).

    Bring to room temperature

    Remove the steak from the refrigerator 20 minutes before cooking to come closer to room temperature for even cooking.

    Cook the steak

    Preheat a grill or heavy skillet (cast-iron) over high heat until very hot. Remove steak from marinade and pat dry with paper towels. Lightly oil the grill grates or skillet. Sear the skirt steak 3-4 minutes per side for medium-rare (internal temp 125-130°F / 52-54°C). For medium, cook 4-5 minutes per side. Avoid moving the steak while searing to get a good crust.

    Rest and slice

    Transfer cooked steak to a cutting board and let rest 5-8 minutes. Slice against the grain into thin strips. Keep warm until plating.

Papas (Potatoes)

    While steak marinates or after, bring a small pot of salted water to a simmer and par-cook the diced potatoes for 5 minutes until just tender but not falling apart. Drain well and pat dry.

    Heat olive oil in a large skillet over medium-high heat. Add the finely chopped onion and cook 2-3 minutes until translucent. Add the drained potatoes in a single layer. Let cook undisturbed 3-4 minutes to brown, then toss or flip and continue cooking another 4-6 minutes until golden and crisp on the edges and cooked through.

    Season with kosher salt and black pepper. Stir in optional chopped parsley or cilantro. Keep warm until ready to serve.

Huevos (Eggs) & Toast

    About 5-7 minutes before serving, heat a nonstick skillet over medium heat and add 1 teaspoon butter. Crack two eggs into the skillet and cook to desired doneness: sunny-side up (cover pan briefly for set whites), over-easy (flip gently after whites set and cook 15-30 seconds), or over-medium (cook 45-60 seconds after flip). Season eggs with salt and pepper.

    While eggs cook, toast the bread slices until golden and spread remaining 1 teaspoon butter on each slice.

Plating & Serve

    On each plate, arrange a portion of papas, place sliced carne asada alongside or on top, and add two eggs in the preferred style. Add toast on the side.

    Garnish with lime wedges, sliced avocado if using, and serve with hot sauce or salsa. Squeeze lime over steak just before eating.
