    Prepare eggs

    Crack 3 large eggs into a mixing bowl. Add 2 tbsp whole milk, 1 tsp salt, and 1/4 tsp black pepper. Whisk vigorously until completely homogenous and slightly frothy, about 20–30 seconds.

    Heat pan

    Place a nonstick or well-seasoned 8–10 inch skillet over medium-high heat. Add 1 tsp neutral oil and 1 tbsp unsalted butter. Allow butter to melt and foam but not brown, about 30–45 seconds.

    If using bacon, sausage, or raw ham: cook ahead of time in a separate skillet until fully cooked (bacon crisp, sausage no pink, ham warmed and edges slightly browned). Drain on paper towels and chop to indicated sizes. For pre-cooked deli ham, simply dice and briefly sauté (30–45 seconds) to warm and develop color.

    If using pre-cooked packaged meats, reheat or chop as needed so they’re ready to add when the omelet is nearly set.

Vegetables

    For firmer vegetables (onion, peppers, mushrooms): heat a small amount (about 1 tsp) of oil in the skillet over medium heat and sauté onion and peppers 2–3 minutes until softened, add mushrooms and cook another 2 minutes until moisture has reduced. Transfer to a bowl and keep warm.

    For spinach: if using raw, wilt in the hot pan for 20–30 seconds until just softened, then squeeze out excess moisture. For tomato: seed and dice and add raw at the end (tomato is best added fresh to avoid making the omelet watery).

Assemble & Cook

    With the pan over medium heat (but not smoking) and butter/oil shimmering, pour the beaten eggs into the skillet. Let eggs sit undisturbed for 8–10 seconds until edges begin to set.

    Using a spatula, gently push the set edges toward the center while tilting the pan to allow uncooked egg to flow to the edges. Continue this motion for 20–40 seconds until the eggs are mostly set but still slightly glossy on top.

    Evenly distribute your chosen fillings over one half of the omelet: meats (bacon/sausage/ham), sautéed vegetables (onion/peppers/mushroom), spinach (wilted and squeezed), fresh tomato, and 1/4 cup grated cheese. Use moderate amounts so the omelet can fold cleanly.

    When the eggs have mostly set and cheese is beginning to melt (about 30–60 seconds after adding fillings), use the spatula to fold the empty half over the filled half. Press gently to seal and cook another 15–30 seconds to finish. For a slightly runny interior, remove now; for fully set, cook 30–45 seconds longer.

    Slide the omelet onto a plate seam-side down. Garnish with sliced chives and a dash of hot sauce if desired. Serve immediately.
