Prepare the Fries

Cut the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch wide, to create uniform fries.

Dry the Potatoes
After soaking, drain the water and pat the potatoes dry with a clean kitchen towel to remove as much moisture as possible.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add a handful of dried potatoes into the hot oil. Fry in batches to avoid overcrowding. Cook for about 5-7 minutes, or until they are golden brown and crispy.

Drain Excess Oil
Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Immediately sprinkle with salt.

Drizzle with Truffle Oil
Once all fries are fried and drained, drizzle the truffle oil over the hot fries, making sure to cover them evenly.

Add Parmesan and Parsley
Sprinkle the grated Parmesan cheese over the fries, followed by the chopped fresh parsley for a pop of color and flavor.

Serve Immediately
Serve the truffle fries hot, garnished with additional Parmesan or parsley if desired.
