Prepare Sushi Rice

Cook the Rice
Rinse the sushi rice under cold water until the water runs clear. Drain and add to a saucepan with 1.25 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18 minutes or until water is absorbed. Remove from heat and let it sit covered for 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer the rice to a large bowl, drizzle the vinegar mixture over the rice, and gently fold it in with a spatula. Allow the rice to cool to room temperature.

Mix the Ingredients
In a medium bowl, combine the chopped sushi-grade tuna, Sriracha sauce, green onion, cilantro, and soy sauce. Mix gently until all ingredients are evenly coated.
Assemble the Sushi Rolls

Prepare the Nori
Lay a sheet of nori on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking, and take about a handful of sushi rice, spreading it evenly over the nori, leaving about 1 inch at the top.

Add the Filling
Spoon the tuna mixture along the bottom edge of the rice-covered nori.

Roll the Sushi
Using the sushi mat, carefully roll the nori away from you, applying gentle pressure to keep the roll tight. Roll until you reach the bare edge of the nori and wet it slightly to seal the roll.

Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Sprinkle with toasted sesame seeds and serve with wasabi and pickled ginger if desired.
